In the standard chivito, the cut of meat is usually skirt steak or filet mignon. From there, the sky is the limit. The chivito canadiense contains Canadian bacon in addition to the usual ingredients. A fried egg (or sliced hard-cooked egg if you prefer) is a common add-on, and grilled red peppers or onions, hearts of palm, olives (black or green) and pickles often find their way into a chivito.

Had they spent longer studying these birds that didn’t act like birds, the explorers might have named them for any number of their unique qualities—their swimming speeds or their ability to get around on land without legs or wings. Pinguim is Portuguese for fat which perhaps refers to the oil derived by slaughtering penguins or to their girth. In Welsh, pen gwyn means white head, a term that humans gave to the Northern Hemisphere penguin species before slaughtering it into extinction.

Baritu National Park
The park's inaccessibility provides critical habitat for the near-extinct jaguar and the onza, a puma-like cat species, making it a unique stop on Argentina tours. Smaller cats such as ocelots also roam the park as does the endangered tapir, giant anteater, speckled bear and the capuchin and howler monkey species. Baritu is also home to the raccoon-like coati, the neo-tropical otter and such bird species as toucans and the world's largest eagle, the harpy eagle.

It was here that the rebel movement gained strength by forming an “republic,” consisting of two large settlements and many small settlements with a total population of several thousand. The leader took the title of Ganga Zumba and ruled over these settlements which had their own chiefs, including Zumbi.

Baleen Whales on Tour in Chile

Starting in the north, visitors on Chile tours travel to the Damas Islands Marine Reserve and the Chanaral Island Marine Reserve primarily to see the Humboldt penguins, though migrating baleens, including humpbacks, blues and fins, also pass through these protected waters.

The Galapagos Penguin

Standing a little over a foot and a half tall, the adult Galapagos penguin weighs about six pounds and has a black face and body feathers with a white front. Its black feet and jaw are tinged with pink. It has shorter feathers than other penguin species, helping it to survive in warmer conditions. Living in colonies of up to about twenty pairs, the Galapagos penguin spends much of the day in the water where cooler temperatures are more to its liking, returning to land after the heat of the day.

Terrain and Weather
The region is mostly desert terrain, including 800 miles of coastline and the 72,000-sq mile Sechura Desert between Piura and Chiclayo. In places, the Andes and the Pacific meet. Though coastal weather is pleasant year-round and usually sunny, most visitors prefer the summer months, starting in November and ending in May. Surfers on Peru tours will have to choose between warmer temperatures and smaller waves from December to February or larger waves but cooler, windier weather from March to November.
