Italian pastas, gnocchi and polentas are the mainstay of many restaurants throughout the country. One famed pasta topping is Caruso Sauce, with a cream-base and mushrooms, onions and ham. It is named after Italian tenor, Enrico Caruso, the operatic superstar who performed on tour at the major houses of South American capitals, including Montevideo’s Teatro Solis and the Teatro Colon in Buenos Aires.

The Habits of Penguins

For penguins, temperature is everything, their waterproof feathers keeping them both cool and warm. Keeping cool is one of the penguin’s main pre-occupations. On land, their elongated bodies and flightless flippers limit their movement to a slow gait, forcing them to lead a sedentary existence. This makes them easy to observe during Antarctica tours and travel to Patagonia. Breeding in the shade or burrows and staying underwater also keep the temperature to their liking. Some species have patches of featherless skin that allow heat to escape.

The Bandeirantes

The bandeirantes were entrepreneurs, not government employees, operating in large expeditionary groups, some numbering into the hundreds, known as bandeiras. In the slave trade, the bandeiras would capture indigenous people and walk them, shackled, to the coast. Those who were still alive by the time they arrived were sold, providing the bandeirantes a lucrative profession.

Andean Flamingos of Chile

The Andean flamingo (Phoenicoparrus andinus) can live in extreme temperatures that dip as low as -20 degrees F and as high as 86 degrees F. The species is found in high elevations of the Andes in Peru, Bolivia, Argentina and northern Chile. The body of the Andean flamingo is a very light pink, appearing almost white. Its hindquarters and bill are black and its legs, yellow. If you get close enough, during your travel to Chile, you’ll see the red splotch between its nostrils.

The Galapagos Penguin on Tour

The Turtles of Panama

The two turtle species you are least likely to see on your Panama tours are the Eastern Pacific green turtle (Chelonia Agassizii), also called the black sea turtle, and the loggerhead turtle. While the large loggerhead turtle is found in the vicinity of the isthmus, you are more likely to see one in the water than nesting on a beach during your travel to Panama.

Terrain and Weather

Peru's southern coast is desert terrain. There is more variation inland where deserts are interspersed with fertile valleys, gorges, mountains and plateaus. The coastline has a dry year-round climate and is sunniest from December through March. From May to October, the garua mists enshroud the southern coast. As one travels inland, the desert temperatures go from hot to hotter. May to November is cloudy below 650 feet.

Drinking in Uruguay

When the temperatures drop, Uruguayans get out the grappamiel, considered the national libation. A tradition imported from Italy, grappa is distilled from what remains after the wine leaves the barrel. In Uruguay, honey (miel) is added in the process. Grappamiel is sold as is or produced with a wide range of flavor additives, everything from chocolate to almond to chamomile.
